The start of the British game season is almost here, and Sussex British Bistro is bringing it straight to Soho. From 13th August, we're serving the season's first grouse as a special on our à la carte menu, prepared the Sussex way to celebrate one of Britain's most anticipated food traditions.
Grouse is a genuinely wild bird, shot on the Yorkshire moors and impossible to farm, which is exactly what makes its arrival each August so special. This year, only 120 birds are arriving across all our restaurants for opening week, so availability at our Soho bistro will be strictly limited.
Our Young Yorkshire Grouse is served with elderberries, cauliflower purée and crispy bacon, finished with wood sorrel — a dish designed to celebrate the bird itself, with sweetness, earthiness and a fresh citrus edge working alongside it. It's a true reflection of British produce and seasonality, right in the middle of Soho.
